"A fine beer may be judged with only one sip, but it's better to be thoroughly sure." -Czech proverb
The best judge of the quality of a beer is the person holding the glass in their hand. We believe that everybody should be able to enjoy beer. You do not need to be a 'craft head', and perhaps you don't even enjoy beers that are especially bitter or high in alcohol content. Or maybe you prefer it. Either is OK with us. We like a wide range of beers ourselves, and we recognize that all adults have personal preferences. We want to promote both education and exploration, starting from what you know and what you like.
As a brewery, our goal is to focus on beers that strike a perfect balance. Every brew involves ingredients and characteristics that are in dynamic tension--whether it's tension between the sweetness of malt and bitterness of hops, or a tension between alcohol and yeast. Finding this balance, where subtle complexities of each element can be expressed without diminishing other traits in the beer, is the art and craft of various brewing traditions that have evolved over millennia.
We plan to produce a wide array of beer styles, typically more than 20 unique offerings each year. This will include stouts, IPAs, porters, barrel aged beers, reds, browns, blondes, and others. But more than other breweries on the craft scene, we will also offer up a full range of lagers, produced using traditional European brewing techniques. This involves a bit more time and effort than the lagers currently produced by most US craft breweries, but it yields a more balanced and enjoyable beer, as well as a smooth drinkability that can be appreciated with every sip.
We will let you be the judge, since your enjoyment with our beer is what ultimately matters most.
